Blueberry Jam Scrolls Recipe IngredientsFor the dough: 3/4 cup of luke warm milk 2 sachets of dried yeast 1 egg + 1 egg yolk 1/4 cup sugar 1/4 cup melted butter 3 cups of Plain Flour 1/2 tsp of salt 1/3 cup of our Blueberry & Vanilla Bean Jam Instructions: Prepare the dough by mixing the milk, yeast, egg, egg yolk, sugar & melted butter in an electric mixer. Gently mix the flour & salt through. Then knead for 8 mins, adding small amounts of flour if the dough gets too sticky. Place dough in an oiled metal bowl & cover with cling wrap. Leave to sit for at least 1 hour. Then place dough onto floured surface and roll out to a rectangle about 1cm thick. Spread 1/3 Cup of our Blueberry & Vanilla Bean Jam onto the rectangle, leaving 1 inch from the edge. Roll up from the shortest edge then slice into 1 inch thick slices. Place scrolls into a pre-greased springform cake tin. Cover with cling wrap & leave sit for 30mins. Remove cling wrap & bake at 180 C for 20mins or until golden brown. While that’s cooling, prep the icing. IngredientsFor the icing: 125g of softened cream cheese 125g of softened butter 1/2 tsp of Vanilla Essence 3/4 cup of icing sugar Instructions: Beat with an electric mixer until smooth. Pop the scrolls out of the tin once they are cool enough to handle. Drizzle with the icing. Dust with Icing Sugar and decorate with fresh blueberries.
