Ingredients For the marinade: 3 tablespoons Spiced Cherry Charcuterie Paste 1 tablespoon soy sauce 1 tablespoon olive oil 1 tablespoon balsamic vinegar 2 teaspoons seeded mustard 2 garlic cloves, finely minced Salt & pepper, to taste Optional: a pinch of chilli flakes or smoked paprika for heat For the skewers: 500g chicken thigh fillets, cut into bite-sized chunks 1 red onion, cut into chunks Olive oil for brushing Fresh herbs or sesame seeds, to garnish Method Make the marinade: In a bowl, combine all marinade ingredients and mix well until smooth. Marinate the chicken: Add the chicken pieces to the marinade, toss to coat, and cover. Let it marinate in the fridge for at least 1 hour, preferably 3–4 hours for full flavour. Assemble the skewers: Thread marinated chicken and red onion pieces onto skewers. Brush any extra marinade over the top. Cook: BBQ/Grill: Preheat grill to medium-high. Cook skewers for 10–12 minutes, turning occasionally until charred and cooked through. Oven: Preheat to 200°C. Bake skewers on a lined tray for 20–25 minutes, turning halfway and basting with any leftover marinade. Stovetop: Pan-fry in a lightly oiled grill pan over medium-high heat for 3–4 minutes per side.
